Sounds good.
I make a quick salad like this, slightly changed. I add avocado chunks, omit the oil and salt. Stir it up a bit to allow the avocado to coat everything just a little. Yum!
My basic salad dinner goes like this........
Cut up some greens into a mixing bowl. Greens may include various lettuces, chard, spinach, kale, bok choy, cabbage, okinawan or cholesterol spinach. It's whatever is available in the garden. Dice in some herbs and onion greens, again whatever is ready in the gardens -- perhaps cilantro, basil, rosemary, parsley, chives. .
Now with the green requirement filled, add a variety of other things, depending upon what's available. Tomato, fresh beetroot, kohlrabi, carrot, radish,
apple, banana, pineapple, ground cherries, sweet pepper, greenbeans, cooked beans/cowpeas, fresh peas, cheese, hardboiled egg, cold cooked potato or sweet potato, pickled pipinola. Ya never know what will be in the salad! At times I'll add bits of meat, such as pulled pork, lamb,
beef, or
chicken. Hubby doesn't eat fish, so I put fish on the side for myself. Sometimes hubby finds flowers in his salad, which he picks out if they're big
enough. He has a difficult time getting past the mental image of flowers being food.
Salad dressing may be pickle juice, vinegar & oil,
honey & mustard, garlic mayonnaise, or a homemade cheese dressing.
