Preserving the Pig

This year I raised a pig for meat. In the past I have hunted for food, raised chickens, rabbits, and sheep. I had a friend looking to get rid of a boar pot belly, so I grabbed it and brought it to the farm for some compost eating and rooting. He didn't get too big, nor not like I wished, but nonetheless, I got a good chunk of meat for the freezer and root cellar.

Below area a few pics of the pork that is now hanging in the root cellar and will continue to age until ready to eat. I plan on picking up a pair of guinea hogs this month and get them in the woods to overwinter and clear new space.
