Generally I don't cook at home but for the sake of my son I have to prepare some restaurant style recipes. Actually he loves cottage cheese (paneer) more than Chicken or lamb which are my favorite. I am going to make a creamy curry gravy with green peas, my wife's favorite as well known as Matar paneer and one spiced scrambled cottage cheese also known as Paneer bhurji. These both are goes well with some homemade flat breads and flavoured rice.

I would like to share two recipes that you can easily make at home and both will surely make you want more. I know being vegan is not a easy task but I assured you would love them.
First one is an appetizer vegetable manchurian dumplings made by using vegetables like beans, carrot, cabbage. This dumplings are crispy and are stir fried with manchurian sauce. This veg manchurian recipe will take around 20 minutes to finish.
The second one that you can try is a main course side dish called chickpeas curry. It is nutritious and goes excellent with rice and breads. Boiled chickpeas are cooked in a tomato onion gravy. This <>chickpeas curry is very popular among vegans.
I hope you can make them easily, these will bring something new to your taste buds. A change from your daily stuffs.

Here in India, there is popular traditional dessert called jalebi is made by using this lacto - fermentation method.
Yoghurt is mix with all purpose flour and make a dough by adding little water. Cover and keep overnight at room temperature or in a light warm place.

Next day some bubbles appears over it. Whisk nicely to make a free flowing lumbs free batter. Heat oil in a wide flat pan over low flame. Add the batter in a piping bottle and pipe in a spiral shape over the oil. Don't pipe the batter in hot oil otherwise you won't get the perfect spiral shape.

Fry till crisp golden on both sides. Drain and dip in sugar syrup for a minute. Serve it with hot milk, nuts and thicken milk called Rabdi.

This is a popular recipe and generally made in festival season. In some places it is served in morning breakfast as well. Here is a detailed recipe with a video for better understanding..https://www.hassanchef.com/2020/04/crispy-jalebi-recipe.html?m=1

It differ from region to region. What my favorite is to have one hot chicken soup.. And my personal favourite one is chicken manchow soup. It has been widely used against Cold, flu and sore throat. Herbs like ginger, garlic and chilli are used to make it.

Ginger has been widely used from old aged against symptoms like cold, flu and sore throat. Chilli used in this soup ensure that your nose start running and mucus starts moving.

Herbs like cilantro leaves and bamboo shoots also provide the essential minerals. To heat your body against these cold like symptoms try Chicken manchow soup once in a day.

I don't know if you would love to try it. But it is from my personal experience to share with you. If you add one boiled potato two tiimes in your diet , you would definitely gain weight. It is easily available in your kitchen also.
I had a friend in my college days and he used to eat one boiled potato every day  with his lunch. And within 4 months he gain weight quickly.

Nowadays I used to provide  boil potato to my 6 years old boys diet. And he is also showing positive response.

We in India make many popular dishes with potato and one of the most popular one is Aloo paratha(spiced potato stuffed flat bread). It is made by stuffing in a whole wheat flour dough and roasted on a pan till crisp golden.

You can make it and try in your breakfast.
