Hi. We had a bumper crop of pickling cukes this year and I have put away more than I can use for the next several years. Just wondering if anyone has suggestions on what to do with the excess?

I have seen some recipes for jelly or jam made with cucumber that are intriguing. They usually seem to have something else like mint or ginger in them. A lot also have lemon, lime or ACV which is probably not only for preservation. But I made a salted melon jam with cantaloupe and scotch bonnet peppers and since I think of cucumber as a lot like a less-sweet melon, I'd be tempted to try a cucumber pepper jelly/jam, or maybe a cucumber basil jelly.

We slice them very thin and use them like greens on sandwiches, but that's only going to work for a couple weeks until they rot. Maybe find someone nearby who wants to buy them for making pickles? If you were my neighbor I'd be willing to take 10-20 gallons.

I eat the pickling cucumbers just like any cucumber.

Pick the when really small to pickle as gherkins.

Fix a Cucumber Sandwich which uses a cream cheese and mayo or yogurt spread.

Make cucumber soup or gazpacho:
