ice cream churner or machine

My mom had an ancient ice cream machine that made the best ice cream. I used her recipe to make it in her machine and it was always heavy and smooth. I've gone through two or three machines and using the same recipe, can not get that "heavy" texture—the other ones put too much air in the batch. The good machine is long gone and I want to get another one and am tired of trying yard sales.

Can anyone recommend a machine that doesn't allow so much air to get into the cream?

in lieu of the right machine there's always experimentation, such as modifying the stirrer so it doesn't stir as well.
or you could brake the churn to slow it down early on and release the brake towards the latter stages of the freeze. would the [induction] motor handle some tinkering without melting down? i'd like to see that.

The difference is usually caused by air (30% vs 50%) and also due to butterfat (18% vs 6%).

The formula that you use, is it 6% butterfat (soft-serve) or is it 18% butterfat? Experiment with these percentage and see if you can create something that you like.

But to answer your question directly this is the ice-cream maker that I use. I think it is the best:

There are electric ice cream churns like the old-fashioned hand crank ones.

Have you tried any both these?

Your answer may have cracked the code! I never considered fat content as possibly playing a role.

I'm a fan of Ninja products so I might give that one a try. Thank you!
