I am interested in buying an enamel cast iron pan but am concerned about the paint. I am like paul in the fact that I would prefer to avoid the toxic gick, but my wife likes how the enamel pans so i am looking into them for her. Thanks for your guys help!
I've got one but it doesn't work nearly as well as my regular cast iron pans that are well seasoned so I almost never use it. The enamel is actually powered glass that is fused onto the metal. It is pretty much chemically inert and I wouldn't worry about any toxic gick unless you were heating it up past 1600ºF which is where the enamel would start to melt again.
It will cook evenly but I found enamel to be a pain in the butt. The dutch oven one I have sits in the cabinet. The biggest problem I had was removing stains.
It seems to me that enamel comes down to aesthetics instead of functionality. Them look nice but they do not perform as well as a frequently used cast iron pan.
