I don't like to sprout mixes, they sprout unevenly and are just more work. I found it easier to sprout different things separately and mix them at feeding, especially if they have very different sizes or sprouting times. Small seeds plug the holes or fall through the big trays, big seeds aren't sprouted in time.
I used to sprout barley or wheat, whichever I can get cheapest organic. Most grain is sprayed with roundup right before harvest to make it die and dry down evenly, so non-GMO is not good
enough for grains if you are worried about the sprays.
I also tried clover, radish, field peas, sunflower seeds, millet, milo, beans, mustard, and pretty much any leftover cover crop seed. They eat them all, but too expensive or PITA for the minimal additional nutrition with the exception of sunflower. In my opinion, your mileage may vary.
