when to harvest daikon

I have some nice big fat daikon growing, they do really well in my yard, I am going to shred and ferment them. Is there a best time to pick them, a time when the flavor is the best? Some have shot up flowers already.

I think that...

Flavor is best when they are grown in cool weather, and the younger the better. But younger equals lower harvest weight.
They get fibrous when they start flowering. I don't like to eat fibrous radishes.

So for me, the best time to harvest is after the bulb has grown to a respectable size, but before the plant starts flowering.
