The eye is awesome!
I have had a lot of success growing pumpkins and winter squash in pretty fresh manure piles. If you grow them with little water, they will put roots pretty deep and can hit the soil below. I have also had luck with onions and tomatoes. The tomatoes will need good staking but they can tolerate higher nitrogen amounts. They may not produce as much fruit but mine get very leafy which shades the beds and keeps them cooler while preparing the soil for fall planting or the following spring. I usually just take a few of my leftover seeds and plant them all over to see what grows. I have had sunflowers dropped by birds come up and even a hazelnut planted by a blue Jay.
