I've started to grow sweet potatoes in rectangular storage containers off my patio. The sweet potatoes can get enormous. I have one that is shaped like an acorn squash. My Bride normally cooks these in the oven and we eat them skins and all. This year, she made a sweet potato pie that was to die for. After baking, it needs to set in the fridge overnight as the filling seems looser the first day. She also made Thai sweet potato and carrot soup. Yum! Learning to expand our options.
