Hi Tracy; Yes, apple wood will work just fine. The part about the oven is 350 F for 12-18 minutes with parchment paper on your baking tray, stir 3 times while finishing.

Hi All; Thought I would try my hand at smoking almonds this week. I have been smoking cheese for the last six months and loving it, so I thought it was time to venture into something new. This is SO much easier than cheese ! Made my first batch yesterday... today those will be gone... SO... i'm making another batch ! smokey, spicy, salty, sweet HMM good ! 10 minutes exactly in a salt water brine... 2 hours in a hickory - cherry smokey wood fire, then mix in your spices (goat butter, honey,paprika,salt , garlic and chili powder.) Finish them off in the oven for 15 + minutes and don't burn yourself grabbing them off the pan! Tomorrow, I'm thinking of a longer (4 hr) smoke with hickory and salt only as a spice... Should be good !
