New to fruit trees in the tropics! Where to start?

Hi Everyone,

So we just bought 10 acres in Mexico to turn into a permaculture farm, eco village, and retreat centre. There are some existing fruit trees on the land but I have absolutely no idea what care they need or how to successfully plant many more. Can anyone point me to a good resource on fruit orchards in the tropics? Snail mail here is pretty hard so online resources or ebooks would be the best!

We are in Mazunte, Oaxaca, (Zone 11), 1km from the coast and at low elevation (so we don't get the evening dew that happens in the mountains behind us).
