Humane is an interesting word in and of itself. It means something different to everyone. Ultimately, I guess to us it means quick and clean, but the animal kingdom is not aware of this thought construct, they just do it as needed (Except cats...they seem to like torture a little, lol)
It seems that we are the only ones that know suffering- a human belief. Those dreaded egos, and we have made the mistake of projecting our suffering on other species who do just fine between themselves.

A cloth glove or towel helps with slippery fish. I don't bother with scaling because I don't usually eat the skin, so I filet it off...and the scales go with it, of course. After removing the filet from the carcass, turn it scale side down and starting at the tail end, run your very sharp filet knife right up the entire filet where the skin meets the flesh. Hold the piece of skin down on the table as you do this. Angle is everything. It will take some practice, but much better than finding scales in unimaginable places for the next three weeks.
