Hello,

The holidays has become one of my favorite times of year, I like to cook for other people, get together and talk, laugh, etc.

On this morning after thanksgiving I thought I'd ask what everyone's favorite breakfast is (I know you can't speak for everyone, just yourself).

We found a new concoction about a year or two ago that my wife and I can't get enough of. Avocado mixed with lemon, on toast, topped with and egg.

My favorite breakfast.......well, there are 2.

1- a meal that is 100% provided by my permaculture efforts (be it by growing, foraging, trading, etc). Once upon a time that was a lofty goal. Now it's the norm. The day just starts out better for me when I know that I'm not degrading the earth by my food choices, that I am living more in harmony. I didn't always feel this way, as I gobbled down imported coffee, commercial eggs and bread, imported fruits. At some point I gradually switched.

2- breakfast with a friend or friends. Oh, the food is never permaculturely produced, but that's ok for now. I'm connecting with a friend, connecting with my community. This is important to me and part of the steps to living a permaculture lifestyle.

I eat quite a variety for breakfasts. At this point in my life I don't think I have a favorite breakfast menu anymore. As a younger person it use to be French toast smothered in applesauce and maple syrup.

My favorite breakfast is a Sausage Biscuit.  A sausage patty between biscuit halves.

Next I love a fried egg on buttered toast.  The egg just tastes so much better that way.

I have never got a picture of this, but my favorite breakfast is:

An omlette, where I take fresh eggs, some milk to make it fluffy, then homemade bacon fried before hand, onions fried beforehand, and some green peppers. These I mix into the omlette, and then fry in a frying pan.

For hash browns I like to take red potatoes, boil them for about 20 minutes, and then smash them flat, skins and all. These I put on a greased griddle and then fry slowly, basting the tops constantly with olive oil, salt and paper, and a little fresh chive.

I like thick Texas toast, homemade of course before hand, buttered and pan-friend on a skillet.

A couple of thick slabs of homemade bacon always goes well with breakfast.

Usually for an edible garnish I split a few oranges into quarters, and then place a dollop of yogurt on top. This give the plate some color, and adds a bit of sweetness to the salty main meal.

When I do a breakfast, that is usually what I cook up. Sometimes though, at our house, we have Breakfast-For-Supper, and that is what we will have as well.

Our everyday breakfast consists of potatoes(steamed and than fried in pork lard), kale( freshly harvested and cut up fine), eggs(mostly 1-2 days old), onions(from the garden, cheese(from a local cheese maker using grass fed cows),(bacon if we have), home made ketchup(from our own tomatoes).
sometimes we put our sweet potato in the mix. some times it is a purchased turkey sausage.

i am really not kidding we eat this every morning. sometimes we have fried egg sandwiches with homemade mayo, homemade ketchup, lettuce from the garden, sourdough bread from our neighbour, cheese from said local cheese maker, along with one of our own eggs.

all of this is organic/or better.

depending on what i have to use up, it is

-oatmeal with whatever fruit needs to get used up
-some kind of grain cooked overnight in the slow cooker, usually with any apples that have passed their prime (sorgum or rye, usually)
-depending on how the gut is feeling, maybe some homemade yogurt, which I love but whether I can digest it or not seems to come and go.
OR whatever delightful leftovers are hanging around from the day before.

Of late my breakfast is a glass of whole milk and a boiled egg.  I hope before long that boiled egg comes from my chickens.

Milk... will take a while.

Sausage
Smashed Red Potatoes
Oranges/Grapes over Yogurt

YUM!

I think to qualify you have to have something with it....but maybe that could be more coffee to qualify?

This is not typical for me, but I have made a large bowl of coffee, and mixed in lots of milk and some sugar and then stirred in lots of nut butter along with raisins, coconut or whatever else is in a trail mix. I let it simmer for a while then shut it off and wait till it cools. I get my coffee, mixed with sort of a high protein porridge.

This is most often done when I have only a microwave at a job site, a bowl and a spoon. I get a full meal in one container.

When I'm cooking for others, it's usually an omelet or pancakes.

I made pancakes when I was in the Philippines. Nova said hers tasted just like dough. Her sister thought it was more like bread crumbs. I had made pancakes without mashed bananas in them. Their bananas are much tastier, a mixture of sweet and tangy. This is something they had never tried before and definitely did not like. So, I mashed up a bunch of bananas into the rest of the batter, and they agreed that these were good pancakes. We used Wild Honey instead of pancake syrup.

1 cup oatmeal

2 cups water


1 Minute in insta pot   then allow for natural vent...,     then add handful of real blue berries  a few frozen strawberries,   then some maple syrup.


Gives me 2 meals, and  I can walk away come back 30 min to 2 hours later and it is hot and ready.


Other than that I make french toast with homemade bread then put  onions on top with mushrooms then a slice of cheese that melts over it .

Usually I have coffee & milk. Sometimes with an egg or fruit or muffin.


A family tradition this time of year is creamed turkey on toast.

Juevos rancheros with spicy picante sauce.

Thick slice of ham with red eye gravy & hash browns.

Buckwheat sourdough pancakes with fresh raw honey & fried eggs.

Tortilla Flats quiche.

Mesquite fried rattlesnake & nopalitas with onions & chili petin.

Warm cashews & cold mimosas on the early flight from DFW to HNL.

A couple handfuls of GORP or granola before heading down the trail another few miles.


and then there's bread & cheese casserole ... (might be wise to consult a cardiologist first)

8 slices of bread buttered & cubed

3/4 pound grated cheddar cheese

5 eggs beaten until light

1/2 cup melted butter

salt to taste

2 cups whole milk

Combine eggs, butter, milk, & salt. In a large casserole dish alternate bread & cheese. Pour egg mixture over entire dish. Refrigerate overnight. Bake uncovered @ 375F for 30-40 minutes.

Up until my early 40's, I used to skip breakfast, but now I now it's an important meal for me. Grew up eating yoghurt and musli every morning, and that is one thing I can't stand anymore. We never ever ate eggs in my family as a child, and that is one thing I can eat quite a lot of nowadays. (and no, I'm not overweight, so the egg scare my parents had wa).
I love variety, not having to eat the same thing every morning, so here are some examples:

-  Eggs, any style. Even occasionnally raw egg yolks ( I do not eat the white raw, but I know some people do).
-  Occasionally coffee, I don't drink it often but I like to possibility to do it sometimes.
-  Hot cacao or chocolate bar. I see people eating chocolate in the evenings and I used to, but for me it really works best in the morning/day time, as it is a mild stimulant.
-  Leftovers from the day before
- in the tropics: a whole papaya, or some mangos or some other fruits in season. I can eat quite big quantities of fruits in the morning.
- Thai/asian style breakfast with rice porridge and egg and other toppings, salty ones, (including porc). Or even stir fries. Or sweet rice porridge with cinnamon and dried fruits etc...
- medjoul dates
- Green tea, never black, green tea is much more energising. Should not be taken on empty stomach, but together with food.

An interesting tidbit of information regarding breakfast: my Great Uncle, Cadwallader Washburn started General Mills. If you read their website regarding their history, they note that he came from Maine, and that they have never forgotten their roots.

Naysayers said that he could never mill using steel drums instead of granite, and yet he proved them wrong. Then they said farmers could never provide enough grain as fast as his steel milling rolls could mill, but that never happened either; 160 years later that company (along with the 90 others bought over the years) is still turning grain into cereal.

I eat a variation of the same thing every morning. Mostly fresh fruit, could be berries, kiwis, plums, bananas, apples, pears, chopped up; sometimes dried fruit soaked overnight; a little bit of whatever cooked grain I have around, in the winter cooked down to porridge on the woodstove, rest of the year, just as is; ground flaxseed; homemade nut milk, usually sunflower.

Apples and walnut milk always get a bit of cinnamon.

Like a lot of folks here, we found a breakfast that we eat every morning: sweet potato hashbrowns, made with onions, kale or other greens, ground beef or pork (for a plant-based protein sometimes). Roasted together with some butter, salt/pepper/garlic, often tossed with some parsley. I like to make a few days’ worth ahead of time, warm up in a skillet, throw an egg on top and have toast with it. I love that it is wholesome, warm and savory for the morning. There isn’t anything inherently sugary in it and we can modify it easily to suit our ever-changing dietary needs or the seasons. Add flax or hemp seed, swap beef out for some cannellini beans, kale for spinach, swap sweets for potatoes/beets/carrots, etc.

My normal breakfast is a smoothie made from homemade yogurt, along with fresh or frozen fruit from my bushes until the supply gives out and dried cranberries the rest of the time. I also put in a tbsp ground flax seed and two or three bags of green tea (putting in the tea leaves, as with drinking matcha, gives many times the antioxidant/phytochemical benefits of an infusion).

On treat days I'll eat some kind of really good pastry with strong coffee.

One of my favorite cheap comfort foods, which many would probably consider appropriate for breakfast, is some kind of really chewy/nutty bread like wheat berry bread toasted, saturated with butter and covered with a bunch of runny eggs fried in butter.

Recently though I've been making sourdough pancakes with my wild captured starter -
I split and feed the starter like I do every morning and then add a splash of milk, a little sugar and a little flour to the starter that I'm using, then fry it on a low heat till golden.
Spread with homemade cherry jam that we made last year. A bit more decadent than my usual breakfast and good for weekends :)

Cheese bread, the golden appearance makes me look very appetizing. It's the best to bite it crisp. It's better to add a glass of milk.

Corned beef hash and home fries at the diner, on the weekends.
We love eggs. And my honey will saute onions first, before adding the eggs for an omelet. Or if we have pastrami leftover from Harold's Deli (enormous sandwiches, intentional leftovers) Heavenly! When I am at a farmers market I will stock up on bread, slice and freeze to go with the omelets.
Because of my honey's current work commute, we have oatmeal (cooked in small crockpot overnight-steel cut oats) with flax meal, wheat germ and maple syrup, Mondays/Wednesdays/Fridays. I add blueberries I picked and froze, or a banana.
Tuesdays and Thursdays it's quiche. I make a crustless quiche on the weekends-usually 2 (why waste the oven space) and freeze one. When swiss chard was plentiful I would chop and saute, draining well before putting in the quiche plate. Broccoli and spinach work well too. Eggs, whatever milk product I have, and the same with cheese. I discovered a sprinkling of blue cheese crumbles are magical. I do bake them in a water bath, to prevent the brown egg crust from forming (not my favorite). I use my hand mixer to beat the eggs-makes it fluffier.

Weekdays always steel cut oatmeal with fruit (fresh, frozen or jam), fresh squeezed juice and always black coffee. Weekends usually eggs with toast and often homemade refried beans or home fried potato’s or sometime pancakes, waffles or french toast and occasionally bacon.

Coffee, during the week normally overnight oats or something else I can slobber down fast before leaving for work so I can stay in bed as long as possible.

During the weekend I love to make sous vide eggs, once you found the right softness for your liking they are so easy to make consistently because the temperature is stable. Dial in the right temperature on the stick, plonk in the eggs, hit the shower, ponder life in the morning sun with a coffee and 40 minutes later you have perfect eggs.

I find I don't want much of anything when first getting up. When I start feeling ready for something about 2 hours later, it's an all fruit smoothie for me. So good! And when the weather starts getting colder, like now, I add some of the autumn and winter spices such as cinnamon and cloves to the smoothie which are warming and delicious!

Our favorite breakfast is favorite because 1) it's tasty, and 2) it's all homegrown.

Gjetost or Primost and jelly on toast.
Fresh or canned fruit with kefir.

For anyone who may not know, gjetost is a Norwegian brown cheese from goat milk whey. The whey is simmered down until it becomes thick, caramelized, and has a delicious sweety, nutty flavor. Then it's poured into a mold to cool. Primost is similar, just cooked less so it's soft and spreadable, while gjetost is sliced. Which one I make depends on how far down the whey has cooked before it's time to call things quits for the night. Both are so excellent with our jam or jelly as a sandwich on toasted bread from homegrown wheat! A dish of fruit and kefir round out breakfast for us, with percolated coffee, of course. :)

I like to turn a variety of nuts into a course powder before using the fruit for smoothies. I found that if it's already liquefied, nuts tend to bounce around a lot without getting chopped up, unless the machine is running for an inordinate amount of time.

Nova my wife from the Philippines makes an awesome dessert thing that I often include with breakfast. It is cooking bananas, stewed with yams, raisins, coconut milk and crushed nuts. She hasn't tried most nuts and has never tried dates or figs, so I will introduce those things when they are available. This concoction is sweetened with brown sugar.

It's pretty high toward carbs, so I like to have omelette as well. Sometimes I will just have it with last nights fried chicken.

In a few minutes I will have shepherd's pie for breakfast. It's 5:18 in the morning. At 8:30 I'm bringing coffee to my friend's place and he's making omelette. I generally prefer to breakfast if I can get it. :-)

My aunt and grandmother used to be cooking rivals. I was working for my uncle. We would often eat the supper prepared by my aunt upon our arrival home. Quite often my grandmother, who lived above their garage, would call to see if I wanted to watch Tommy Hunter, a country music guy or various evangelists and Faith Healers, while eating a second supper. I did this on a number of occasions. Whenever I would make fun of any of the performers, grandma would tell me to keep eating. I better heat up that shepherd's pie. I want to have room for The Omelette later.

When asked about my favourite styles of food, instead of naming an ethnicity or any particular food, I often answer, gluttony. :-)
