Couple of elk in the freezers to help get us through the winter.
Was wondering how Jill would cook up an elk roast?
She has a lot of great recipes.
I like to slow cook an elk roast in a dutch over coals with plenty of veggies, especially onions and carrots.  Usually takes a bottle of good red wine, cup in oven the rest in me!  Just salt and pepper for seasonings. (Maybe a bit of garlic).
Love sitting around the fire smelling it cook.

Hi Dennis;  
Congrats on getting a couple elk!   Nothing tastes finer!
We use our wood burning smoker oven.  Some salt/pepper and a touch of garlic powder rubbed on.  Then 4-5 hrs in a maple wood fire.  Ave temp around 220-250 F
Outside will be black... inside will be perfect / juicy / super tasty!
I don't do it but veggys can be slow smoked as well.

Check out Hunter Angler Gardner Chef for a bunch of great ways of preparing game. His seasoning ideas are spot on. I am using more juniper and other foraged seasonings and its really good.
