I'll probably just end up fishing for 4 weeks whenever I'm not working but I've got a few projects I want to get done around here.
New house for me.
We live on a big farm with a river full of rainbow and brown trout running through it so that's a bonus.
Also being a farmer/food producer I'm classed as an essential job so I get paid and still work almost as usual.
That should help keep my routine and sanity.

Alright so today I made some ghee and tonight my girlfriend will make lamb rogan josh.
I'm going fly fishing...

Alright so I set up my grandfathers cold smoker and after salting and honeying the three rainbow trout I proceeded to give them two lots of smoke.
I'd never actually used this smoker before so its all a bit new.
He's quite deaf and I can't go see him to ask him questions right now anyway.

Thoughts and opinions?

The thicker whiter fillets still have a slightly raw texture in the middle.
Smoke flavour  is pretty delicate and I think I'll use more salt and perhaps leave a little longer before rinsing next time.
Also the manuka sawdust he gave me is probably quite old judging by the bag it came in so I suspect it's lost a lot of potency.
