Who uses a curing salt in chicken jerky? I never use one in red meat but have read that it is needed for chicken jerky. Oh well I'm experimenting on myself, lol. I just pulled a batch of chicken jerky out of the dehydrator and did not use curing salt or preheat it to 165. Cooking or steaming it first kind of isn't jerky. Anyway if it tastes off at all it goes to the dogs, if it smells bad it goes for catfish bait.
Tomorrow I'm making a batch of curry jerky from the last of the ground venison I have. I'm trying to clear up some freezer space. Has anyone made jerky from store bought chorizo? I need to learn how to make chorizo from scratch so I don't buy a ton when it goes on sale.
