Frito Pie for a Really Quick and Easy Meal!

So every now and then, I buy a bag of Fritos.  Usually when I do this it is a splurge!  

I always have found memories of the bag of Frito Pie at the neighborhood drive in.  Those probably have gone out of business since we now have fast food places.  

Anyway this is what they looked like:

I like to make mine in a bowl like this because it is so simple:

Here is how I make mine:  Heat a can of chili with beans.  Have a bowl of fritos for everyone to help themselves.

Put a handful of fritos in the bowl.  Spoon a generous helping of chili then sprinkle with cheese and minced onions.  Then Enjoy!


There are several recipes for making it more like a pie. Like this

Frito pie is the best thing in the world. This is my go to when I need comfort food. That looks so yummy!

oh my goodness, this is a bit of guilty heaven with a sudsy adult beverage on the deck after a long day.  Comfort food rules.

That looks great! I'll definitely file the idea away. It's really similar to something we do here (Canada) which we call Walking Tacos. It starts with a bag of Doritos, add taco meat, cheddar, shredded lettuce, chopped tomato, salsa, sour cream... basically you make a taco in a bag. Kids love it. But I'm happy to have this alternative too!

The article mentioned Wolf brand chili & it's also shown in the pictures above. I read somewhere once that Wolf brand has the most protein & calories of any other canned food. Of all the canned chilis I think it tastes the best. It makes good quick & easy enchiladas. Something worth stocking in case of the zombie apocalypse!

The article says Wolf brand is another Texas brand.

As you suggested, I make a quick enchiladas with corn tortilla, cheese then smoother in chili, top with more cheese.  Pop into oven till cheese melts ...

I also an a fan of hot dogs in a bun topped with chili and cheese .. Chili Cheese Dogs,

Although our household is mostly vegan these days, I've settled on a veggie dog that to me does a good enough job with taste and texture to satisfy the craving.  Chili Cheese Dogs were one reason for that craving and I still enjoy those today.  The corn chip enchilada casseroles have become staples as well, especially in the fall season when it provides a good reason to quickly dump tomatoes, peppers, onion, garlic, zucchini, spices, etc....you get the idea....into a large skillet to make the base, then pour it all over corn or tortilla chips and bake, with or without cheese.  Typing these lines....mouth watering already...

Yup! It's our favorite canned chili, too. We like to keep a stash of them in the pantry, for the occasional quick & easy, plus for those times when we are snowed/iced/rain-mudslided in. It's nourishing, tastes good, and is great for lifting the spirits, when you're dealing with cabin fever.

Frito pies - whether with Wolf or homemade chili, have been a favorite, since I was a kid, and with my favorite toppings (shredded cheddar, raw onions, sour cream or crema, black olives, and sliced jalapeños - fresh, candied, or pickled) it becomes an absolute delight to my taste buds.

I'm glad Anne mentioned how to make an enchilada. I hadn't even considered that some people here probably never even heard of them.
