2x8 wall framing

In my basement there are some jack posts installed. I need to frame a wall around some of them but the top plates are pretty wide. I'm using 2x4 for my other walls but for this wall even 2x6 is not wide enough (see image where the plate is wider than a 2x6).

Now I'm thinking of framing a 2x8 staggered wall, using a 2x8 for bottom and top plates and 2x4 for the studs. This particular wall is for a bedroom closet and will be 11.5 ft wide and will include one door.

Please let me know if anyone has a better idea.

That is a fine plan
Lotsa folks use that plan for exterior walls to minimize thermal bridging

Nothing is foolproof to a sufficiently patient fool!
I hate people who use big words just to make themselves look perspicacious.

Another option would be to build a 2x4 wall under the beam that is flush to one side of the beam.  So on that side the wall looks full height and "normal".  On the other side of the wall, box in the jack posts however you want and drywall the whole works.  You'll have a bit of beam (drywalled) and some bumped out post columns.  There's a potentially serious downside in that you'll have many more inside corners to detail.

In some areas, code requires special wood on the sill plate in a basement.  That may be easier and cheaper to get in two 2x4s instead of a single 2x8.

It'll work fine. On an interior wall I see no particular reason to not use 2x8s instead, a bit less fastening to do and usually a hair cheaper for the lumber, where I am.. But it'll work fine either way.

Staggered or two separate 2x4 walls, whichever is easier for you.  If you do two separate walls, frame the door an extra 1 1/2 inch wide and put a couple rips of 3/4 ply or osb to tie them together. Or use 2x8 if that's cheaper/easier. We usually have scraps of subfloor so that's what we use.
