I just split the culinary atom... habanero infused catsup!  I am eating sweet potato fries with Creole Seasoning dipped in habanero catsup.... WOW!!!  This hits all of the aspects of taste, sweet, savory, bitter (from the dark edges), salty, sour from the vinegar in the catsup and spicy.  Habanero is a sweet hot pepper.  They are HOT, but...Dang, I could sell these!

That sounds good! Could you share a recipe? I'm going to be getting a bunch of habaneros to use in fire cider; I may have to buy extra to try this.

Sure.  first, just cut the sweet potatoes into fries, toss with oil in a pan, bake at 400 F for 20 minutes, turn and then cook for another 15 minutes or so.  If they are cut thin, they can burn.  Thick cut needs 4 total minutes.  Salt or dust with Creole Seasoning (Tony Chachere's or your favorite... or your own blend).

I normally make my own fermented catsup, using tomato paste, kombucha, molasses, salt and spices.  ANd, I usually make my own fermented pepper hot sauces.  But, I am visiting my mom.  SO, I mixed some El Yucateca habanero sauce with store bought catsup... it was pretty awesome, really!

This sounds so good, thanks for the recipe. I need to try this. I haven't made fermented ketchup in quite awhile, need to make more of that.

They kept fire breathing monkeys as pets! This tiny ad told me so!
