Quick question. I'm pretty new to fermenting. I have those jars with the spring (airlocks?). While they keep most of the batch down, little pieces do float up, like bits of cauliflower in my giardiniera. Is that a problem? Do I have to toss those pieces when it's done fermenting? It's day 10 so it should be done and I see no mold.

Usually, if there is no sign of mold it is okay.

Next time you make the giardiniera take some pictures for a PEP BB (Badge Bit):

I agree. The floaters provide anchorage space for mold spores and so they're always a risk. But if no mold finds them, then no problem. The mold also needs oxygen, so if you're fermenting under a good airlock and the ferment produces enough CO2 right at first, then the floaters are less of a problem.

One trick to keep floaters down is to put a large leaf of some sort at the top, just under the coil.  Grape or fig leaf work, or a cabbage leaf
