Mayo as a healthy food! Homemade of course... quick and green.

Yes, this is true, I now believe that mayo is a healthy food.
This is an emulsion , so just get good eggs and good fat.

How I got my idea...
I think I do not produce enough bile, so I looked at what could help.
Then I learned what is the bile doing: it emulsifies fats so that they can be digested!!!
So why not emulsify fat before eating it?
I can tell that yes I can eat more fat this way, and that yes the signs of a poor fat digestion went away.
I do it with olive oil.
I just advise to avoid all omega 6 rich oils such as sunflower.

Now the big problem:
Make it fast by hand.
1rst have all the ingredients at room temperature.
My long time recipe that worked sometimes...
Put the yolk in a plate, add very little oil and turn with a fork flat in the plate. Do not wheep!
Mustard can help. Only when it start you can add oil little by little.
Sometimes I had a full plate of a yellow liquid mix...

THE RECIPE THAT NEVER FAILS NOW!

Really, it goes fast, instantaneous!
I smash an avocado in the plate with a fork, and mix it with all the oil I want to, all at once. It makes a sort of cream.
Then I add the yolk on top.
Then I take a breath... and after a few seconds of uncertainty, the miracle always happens, just by turning slowly the fork flat in the mixture... The color turns out lighter and lighter...

Then (after all the salt and spice to taste, or miso, lemon juice or cider vinegar) I add a loooot of chopped herbs, all the green I have at hand.
Usually I mince some onion and grate some zucchini, carrots...
At the moment I add some red crunchy seeds of bitter melon, a very surprising vegetable.

I always add something crunchy, to be sure not to eat too fast. It is too easy to swallow with all this creamy green mayo!
This can be almonds or gourd seeds...
(I am off sugar and grains, so I eat fat for calories)
If I eat too much, my body will tell it and i will want to eat something else. At the moment I eat a lot, every day. Raw farm egg, organic oil and home grown avocado.
