Beet is one of the highest veggie in oxalate.
Cucumber is very safe, as the rest of the cucurbitaceae familly.

Kidney stones are most commonly caused by oxalates binding with minerals (usually calcium or magnesium). To prevent kidney stones, eat a low oxalate diet.
