Stephen Barstow, author of Around the World in 80 Plants, recently spoke on this fascinating podcast - Extreme Salad and Crazy Potatoes

The first part is about potatoes, and Stephen's bit starts at 16 minutes in. Enjoy!

For anybody interested in the potatoes, that part of the podcast is spent interviewing the author of "Reinventing The Potato" in Modern Farmer, and it doesn't really cover anything that's not in the article. So if you're more of a written-words person you can follow that link, read it quick, and then fast-forward the podcast to the salad part.
