For anybody interested in the potatoes, that part of the podcast is spent interviewing the author of "Reinventing The Potato" in Modern Farmer, and it doesn't really cover anything that's not in the article. So if you're more of a written-words person you can follow that link, read it quick, and then fast-forward the podcast to the salad part.
