I was wondering if anyone has ever tried using a sausage stuffer to press hard cheese? I want to try making cheddar and instead of reinventing the wheel and adding another tool to my collection I want to try using what I have.

Haven't done it, but a friend has. It will work, with effort. You need to make sure it will drain, you may need an extra grate in the bottom so the spout doesn't plug. And getting the pressure right is a big pain in the rear. A real press makes that part much easier.

We made a very simple cheese press using a few pipe fittings and some barbell weights we already had. I like it because it is easy to apply additional weights.
