A great way to preserve that rampy goodness? Make ramp pesto. Cut the ends off, blanch, and then add salt, olive oil, pine (or other) nuts, maybe a little lemon juice/pepper.

Huh. I wonder how many times I stepped on that in the woods back home without ever knowing it was edible.
