We spent eighteen months learning commercial meat cutting with master butcher Cole Ward in preparation for opening our own on-farm slaughterhouse and butcher shop which we're building. A film group has just released a series of four one-hour videos about butchering pork, lamb and beef done by Cole Ward. He's an excellent teacher.
