Ginger ale...what to do with the used ginger?

Hey fellow permies, when you make ginger ale...what do you do with the left over ginger? Do you just add it to the next batch or chuck it?

Okay, don't laugh, I eat it. Just plain. I like it.  I do max out, though, and compost the rest.  But I think one could save the pulp up and make gingerbread with it?

Heck, I won't laugh...that sounds delicious! Also gingerbread Yum! I bet we will find tons of uses for it!
