Does anybody have either or both of these trees and also keep chickens?Will chooks eat and thrive on these seeds?

Definitely no problem with paulownias here. Not sure about mimosa. Generally chickens are good at knowing what not to eat. They will even purposely eat a little bit of things which are toxic to them, as medicine.
 
They gave me pumpkin ice cream. It was not pumpkin pie ice cream. Wiping my tongue on this tiny ad:
