We've only just begun milking our two does (who each only had one kid - first-timers) so production is a bit limited at the moment.  Can I freeze the milk then defrost and make cheese when there's enough?

I've heard of people doing that, haven't done it myself.  good luck with the cheese.

Yes.  It might separate a bit when it thaws, but it's still good.  Just give it a shake.
