This link seems great for getting the skin(or “shell”) off of individual peas, and it has a video of them doing it. It comes after they remove the peas from the pods:

“To make them more digestible and tender, you can also remove the shells of each single pea: Blanch peas in a pot with simmering water for approx. 1 – 2 min. before submerging them in an ice bath. Now you can slip off the outer skin with a knife and use peas as desired.”
