I LOVE this YT channel.  Such a remarkable person and great tips.
This bread came out a little denser than I would've liked; from reading, I probably didn't let it proof long enough the second go-round.  Still tasty, especially with butter slathered all over it while warm.

I submit my latest breadmaking session.

My sourdough starter is a few months old, but I still prefer the no knead, yeast assisted breads. I tweaked the recipe a little bit and increased the amount of discard used.
It took a while before I started cutting into the second loaf, so now I'm finally ready to submit.

First BB attempt goes to making bread!  

After finally getting a decent sourdough starter going from scratch as shared on this thread https://permies.com/t/231560/create-sourdough-starter#2020428 , I was able to get some loaves of bread out of it!  

The first round of baking I created two different shaped loaves. With the second batch I tried to make more of a Baguette shape with three loaves, but they turned out to look more like Ciapatas after flattening out. Both rounds of baking brought slicable loaves without crumbling, they weren’t burnt, and they were made by hand without a machine.  No plastic or teflon used at any point. I made sure to use glass trays during the whole process.

The “recipe” was a little intuitive.  I didn’t mix exact proportions of anything. Some sourdough starter, some organic rye and wheat flour at about 1;3 ratio, some liquid whey, salt, and sunflowers seeds.  Once it was all mixed together using a wooden spoon, and bare hands, I shaped the dough and placed in the trays to allow them to rise. After a few hours of rest they were baked in the oven at 210 C for just over an hour.  

Final product was delicious!

a basic banana bread recipe

Ingredients:
3 ripe bananas
1/3 cup melted butter
1 teaspoon baking soda
Pinch of salt
3/4 cup sugar
1 large egg, beaten
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1/2 cup chocolate chips, cranberries, and wallnuts.
Instructions:
Preheat your oven to 350°F (175°C). Grease a loaf pan. In a mixing bowl, mash the ripe bananas with a fork until smooth.Stir the melted butter into the mashed bananas.Mix in the baking soda and salt.Add the sugar, beaten egg, and vanilla extract, and stir well.Finally, fold in the flour until just incorporated.Pour the batter into the greased loaf pan. Stir in chocolate chips, cranberries, and wallnuts.

Bake in the preheated oven for about 60-65 minutes, or until a toothpick inserted into the center comes out clean.Let the banana bread cool in the pan for a few minutes, then transfer it to a wire rack to cool completely.
