Here is my bread submission. It's a recipe for 2 bread loaves. Didn't come out like the pics, but it is very soft on the inside, with a nice, firm crust. This is actually my second time making bread, but first time making 2. Also first time having to knead. Couldn't get the dough to form correctly, or score correctly. Ingredients:
3 ripe bananas
1/3 cup melted butter
1 teaspoon baking soda
Pinch of salt
3/4 cup sugar
1 large egg, beaten
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1/2 cup chocolate chips, cranberries, and wallnuts.
Instructions:
Preheat your oven to 350°F (175°C). Grease a loaf pan. In a mixing bowl, mash the ripe bananas with a fork until smooth.Stir the melted butter into the mashed bananas.Mix in the baking soda and salt.Add the sugar, beaten egg, and vanilla extract, and stir well.Finally, fold in the flour until just incorporated.Pour the batter into the greased loaf pan. Stir in chocolate chips, cranberries, and wallnuts.

Bake in the preheated oven for about 60-65 minutes, or until a toothpick inserted into the center comes out clean.Let the banana bread cool in the pan for a few minutes, then transfer it to a wire rack to cool completely.

Can I use my KitchenAid mixer to do the kneading on this BB? I mean, I know how to knead, but do I knead to?

Hope these are ok, the sweet bread was 'peely' on the bottom, but it slices clean. started with my basic bread recipe
4 cups flour
ts salt
2 tbs yeast
2 tbs oil
2 tbs sweetener
1 1/2 cups liquid

350 until it smells done

the savory one has a couple tbs of a seasoning mix with nutritional yeast, garlic powder, onion powder

the sweet one substitutes 1/3 of the water for peach syrup I had, and a cup of the flour with rice meal from a failed rice milk experiment, used brown sugar and added a couple tbs of cinnamon

Edge case submission
I made two loaves of whole wheat bread, and just for fun, made a johnny cake with lemon powdered sugar icing and ate it before the bread was done cooking. It was my reward for baking bread on a Monday.

I make banana and walnut bread a lot with blackened bananas but this was my first time making a 'rustic' wheat loaf (successfully that is). I used the following recipe for the rustic loaf with the ingredients halved for only one loaf: Rustic bread loaf. I have my own recipe for banana bread in the photos below.
