I cobbled this together based on what I had in the fridge. A rough recipe is:
- 1/2 lb left over chicken
- 1/2 lb of shrimp
- 1-2 large carrots
- 1 stalk of celery
- 1 bell pepper
- 2 heads baby bok choy
- sesame oil
- soy sauce
- ginger
- garlic
- vermicelli noodles

I cooked a stir-fry for dinner (whilst preparing some quinoa for another time). My partner isn't here this evening so I cooked enough for my dinner with leftovers that I'll eat for lunch. I think cooking enough for 2 meals should satisfy the requirement to cook for 2 people.

The recipe is as follows:

Ingredients:

1 red onion
1 green pepper
1 carrot
3 garlic cloves
a small handful of runner beans (mine are from the garden, they are just maturing now!)
1 spoon coconut oil
a block of halloumi cheese

Method:

Roughly chop the veg and cut the cheese into cubes. Heat the oil, toss in the veg and stir-fry (duh!) until it takes on a little colour and softens. Throw in the cheese and continue to fry until cooked.

I made cabbage-and-wood-ear stir-fry!

Ingredients:
tallow to oil pan
white rice
1/2 cabbage
1 packed cup boiled wood ear mushrooms - foraged
sesame seeds
a few cloves of garlic, minced
a bit of whole ginger, minced
salt and black pepper
ground turmeric
a green pepper - home-grown
a couple of eggs - home-grown
chopped almonds

First, I cooked a cup of white rice and set it aside. I rinsed the fresh mushrooms and boiled them for seven minutes to make them tender. I finely chopped the cabbage and lightly steamed it in the pan. I added the mushrooms, sesame seeds, garlic, ginger, turmeric, salt, and plenty of black pepper. After a brief stir-fry, I removed a serving for a family member who is trying to avoid grains and nightshade vegetables for health reasons. Then, I added the chopped green pepper, a helping of rice, beaten eggs, and a handful of chopped almonds. I omitted the red pepper and ground ginger in the first photo, feeling the other seasonings were just right, and I only ended up using two eggs. We both enjoyed our meals, particularly savoring the novelty of using foraged mushrooms for the first time!

I was concerned that my post, above, wouldn't make the grade. I guess what constitutes enough food for two people is quite subjective.

Anyway, as luck would have it, I made another stir-fry last night that does clearly have enough food for two. It was massive. I hope that this is enough to pass when combined with my first effort.

Stirfry for lunch! In order, I cooked: onion and celery, bell and jalapeño peppers, a giant zucchini, and vegan Korean “ribs”. At the end, I stirred in a sauce composed of: yogurt, dark miso, shoyu, Sichuanese peppercorns, and a Sichuanese spice mix. I served it over brown rice and topped it with peanuts.
