Hi.

I have 'invented' really great light tasting but super high-protein pancakes.
*2 cups/500mL of liquid egg whites
*1 cup slow oats (or equal amount of a gluten-free alternative like quinoa flakes, probably will work just as well.)
*2 Tbsp. chia seeds
*2 heaping Tbsp. of peanut butter
*1 cup cottage cheese

Blend in your blender 'til smooth and the same thickness as a conventional batter. (Add more oats or more chia, if necessary)

Fry on your griddle or a cast iron (oiled slightly) fry pan.

Enjoy!!

Anyone have new recipes you wish to share here??

Patrick - love your recipe! I can't have wheat flour so I'm going to give this a try.

Okay, but just so you noticed it.I edited the recipe because I forgot the cottage cheese originally.
