Saw in Acres Magazine that there's a "The Gourmet Butcher" DVD intended for homesteaders and farmers who want to prepare their own meat. It is also good just for knowing about specific cuts of meat and how to use them. Shows step by step butchering for beef, pork, and lamb "from farm to table."

Cole Ward, the butcher in the Gourmet Butcher video, is most excellent and the DVD set is inexpensive and well worth buying. My wife, our son and I trained for eighteen months with him apprenticing to learn commercial meat cutting in preparation for opening our own on-farm USDA/State inspected slaughterhouse and butcher shop.
