I have experience successfully managing and manipulating duck behavior in the garden. I have a face book group Ducks In the Garden that's purpose is sharing these techniques. As for your tomatoes lost Yes tomatoes are one of their favorite foods. But I do not lose any. What I do is plant a cherry tomato plant that I allow to sprawl across the ground. So my ducks can help themselves to duck size tomatoes. Since these are available they leave my regular size staked tomatoes alone. You can even control which areas they work in the garden by water placements. My magiccal most powerful tool is Swiss Chard. Plant lots of it.  They will then graze on it. because they like it. And it is tough enough to bounce back. I do not plant lettuce in the duck patrolled garden. I plant it else where or in a raised bed. We need to except duck eat plants. So plant them their own vegetables you are growing your own duck food.

Both have their place. I am an urban gardener. So I do not have the property for free range chickens. But I do manage 2 ducks as tenants in my heavily mulched garden. They do very well as pest control and I love their personality. I have had chickens for 25 years. Wow the ducks are so different in personality and needs.  I LOVE DUCKS,  I have designed my garden with the ducks in mind. I decide what I plant and what I don't with the ducks in mind.  I even started a FB group  called ducks in the garden where we discuss their garden management.  But if you are wanting to build fertility on you property the chicken tractors may be superior.  SO that's my 2 cents worth.

I am involved in an after school program where I teach basic permaculture gardening to 3-6 graders. I only have them at school for an hour each week in actual gardening classes. I teach a class on Tues and Thursday. Its very difficult to accomplish all the goals in that short period of time. I must have 2 lessons plans prepared each class. One for good weather and one for bad. Here are an example of things I did in bad weather. I introduced vermaculture during the winter months. The kids love the worms. So we composted all winter in our worm hut. We learned about the soils web of life. I invented games assigning each one a character to become in that web. Example one was organic composting material while others were bacteria, mold, fungus, mold mite, earthworm ect. They each held a piece of yarn of the corresponding food providing character. forming the web of life as they all stood in their inter connecting positions. If their food source died they then had to fall dead too. This really helped the kids understand how the food web worked.
On the first day of class I brought in a garbage bag full of trash. Which contained many plastic bottles cardboard, news papers and kitchen scrapes. I poured it out on the floor asked the kids what I had just dumped out. Of course all said trash. All winter we turned that trash into resources building garden themed items. I have a month left and we have used all those items. We used many 2 liter plastic bottles to winter sow seeds. We used some to build SIP planters. My point is there is much that can be taught in the winter. They have learned about hugekultur, wicking beds, we just received a donation of a table top aquaponic system.
As for the summer break my home connects the school ground where I have set up a permaculture garden that they and their family can come. Seeing how they too can grow a non till garden without purchasing equipment. I am building my own aquaponic system for this summer. My students and neighbor hood kids are welcome to join me in my garden this summer. For those that feel a program like this would be beneficial . I am not a teacher. I am a retired person on a very limited income. I actually go in the whole financially by doing this class. But it is important I feel. I tell the kids I'm too old to change the world. But they aren't. They can change the world they can make it better.

I have starting teaching a basic permaculture class for 3-6 grades at our local elementary school in WV. The local newspaper did an article I thought was really great. I am hoping parents would read it and begin to understand more of what I am attempting to accomplish with this course. http://mydailyregister.com/news/3829/learning-about-wiggle-room But again who still takes the paper? Not many, so I guess not many parents will read it.

I'm new here and haven't quite figured out how to post pictures here yet. So I will add a link with information I would like to share. I personally have been very success in managing ducks in my urban garden. Please read my experience with images here http://www.backyardchickens.com/a/successfully-managing-ducks-in-the-garden The creation of the duck yard/garden is outlined here http://www.backyardchickens.com/a/ducks-in-the-garden

Sorry to hear that Nicole. How many ducks did you have? My ducks as a whole only ate potato bugs along with a few leaves with potato bug eggs. I noticed you had them shut up only allowing them limited access to the garden. Which is the common practice. But sometimes when vegetation isn't available at all times there is the forbidden fruit mentality. They never learn to make good decisions but instead try to eat every free plant in site because they are going to be returned to a pen without plants. As you pointed out potatoes leaves are not good for ducks. In my opinion my ducks tried the potatoes but didn't feel the greatest afterwards so they went back to their delicious Swiss chard and cherry tomatoes. The diverse plants were continuously available so they never built up this craving for plants waiting in a pen. Only having 2 ducks also allowed the ducks to learn where they wanted to graze without doing much damage when they made a bad decision. I am sorry your experience wasn't as enjoyable as what I have been able to experience. Check out this link at YouTube of ducks in a Potato patch

Since your rural I thought you might be interested in my duck yard and garden design. http://www.backyardchickens.com/a/ducks-in-the-garden I use 2 Indian Runner Ducks for my garden pest control. I had chicken for 10 + years. This was my first year with ducks and WOW I am a duck fan. I am a dog /horse trainer and I found ways to manage and encourage the ducks to work in the garden areas I wanted them in. That information can be found here http://www.backyardchickens.com/a/successfully-managing-ducks-in-the-garden
