My vote is for the guinea pig also. Yep got exposed in Peru also. Easy kept very tasty. Build a mud oven and get to roasting. Enjoy.
I also have highland cattle. They are excellent small acreage animals. They can live on a rock. You can milk them great butter fat content and very docile animals. But for FRESH and super easy to raise go G Pig. You won't regret it.

Good nest she made. Great picture. Are you raising these to eat? I have eaten a few. They make great lard hogs most of there weight is fat. I have started with a 250 lb hog and wound up with a small dog size carcass.lol. They are good tasting though.

I have been reading this amazing thread. Wow it is huge and full of great advice. I have a neighbor that is in the tree service business, he goes by the house all the time with loads of wood some very big stumps, large bodies, and LOTS of limbs. He doesn't chip. He burns almost daily. I think I will have to let him stack some of this wood on my place for some beds . So you might call your local tree service company and get a lot of free wood. It would save the tree company money by not going to the land fill and paying to dump it. Hope it helps somebody.

Hello Brice. I'm new here also. I can say your in one HOT part of Oklahoma. This is a very nice site. I have always been interested in permacultur. I love eating out of the woods. Harvesting what I can. We have some very good fungi ,wild garlic, onions, fish and animals around our area. One limiting factor is the ground water issue. But am hoping to learn different ways to get around that. good luck with the granit at Mt. Scott
