It's nice because you can unzip the cover and see the quality of the materials inside of the mattress and you can swap out the layers and adjust the comfort if needed. The latex layers can be purchased separately as well - very comfortable. We have had our for over 10 years and it's in perfect condition. They last a long time. I believe most come with a 25 year warranty too.
As for stuffing your pods, have you tried organic or natural wool? We use a natural wool comforter and it's very comfortable. It's also 100% natural, chemical free, ethically sourced and sustainable. And it keeps you warm in the winter and cool in the summer.

Organic latex and wool are much healthier options than memory foam and it lasts a lot longer.
