I am by no means an expert in permaculture, but I do know plants. My suggestion is for packet 1 specifically. The first thought for packet 1 I had was violets (Violaceae). Specifically violets like the wild types. I know they are perennial but they can germinate in shaded grass. Viola naturally competes, chokes out and eliminates grass. They quit flowering and being active around May as well which was a preference that you mentioned. I've seen patches of violets in lawns and there wasn't a single blade of grass inside the patch. They are nitrogen fixers so they help build/replenish the soil as well as being the host plant for Fritillary butterflies. There are so many different species that can add a Wow factor to shaded areas I think it would be worth it to try them. I would suggest Viola 'Freckles' if purple and white spots fit the color scheme. There are native varieties like the Birds Foot Violet which has a pale blue to blueish purple flower and ferny type leaves or maybe the Rosea which flowers pink. They are perfect for the fruit guild because both the leaves and flowers are edible. Just pick what color fits the color palette and tada no more grass but room for other taller perennials.
