Eat them! Thistle Roots Leaves and Flower are all edible! just make sure you cut off the spikes! yikes!

We are in the first stages of designing our food forest and would love some opinions and comments.
we have a 2 acre plot of land in france which is pretty flat and holds water in the soil well
Do we still need to have swales?
It is all grass paddock at the moment and we are planning to mulch it in sections between the paths that we are laying out and hoping to start planting fruit trees next year,
is there anything we can plant in the mean time that will be of benefit? either into the grass or where we are mulching?

Have you got any willow? i have heard that if you leave willow in some water for few days then put another cutting in it works wonders as willow is very rootable and will give off a natural rooting solution.. worth a try.. i have a bay i might try it on myself

Can you combine hugelkulture beds into swales? Or am i just being silly? We have an idea to make a few ponds intergrated pumped up to the highest point then gravity fed to the lowest... Does this sound doable? Thanks for replying again
