Here in the Pacific Northwest the Big Leaf Maple supplies many resources at our homestead. A few ways we utilize them:
-Goat feed (the foliage is high in calcium, a hard to find nutrient in our heavily leached soils)
-Firewood (the btus are decent)
-cover for our poultry from soaring raptors
-shelter from the lighter rains
-shade from the summer sun
-nectar for honeybees
-beautiful tree to look at

We're coppicing the smaller ones to take advantage of the goat feed and small diameter firewood, and leaving the big ones for the good stuff that comes with big trees.

I'm planning an orchard up in the woods myself for similar reasons, and will include oaks and apple trees. When picking your fruit trees, consider the rootstock. In my situation, I'm going to go with something large for drought tolerance and good anchorage...basically low maintenance, but do your research on soil type and local disease pressures that may be mitigated through wise choice of rootstocks. In picking your varieties, look for a spread out harvest to provide food through as many months as possible.

You might consider chip budding them too. With those quantities, you'll save time and a ton of budwood. The same stick that gives you one cleft grafted scion might give you a dozen chip buds. And if your technique's not great and some buds fail, you still have the intact rootstock to try again either that same season or the next.
