What is causing your problems is the fact that your bread has no gluten in it. The gluten in wheat is what allows the dough to trap air produced by the yeast in order for it to rise and become light.
Gluten free breads usually use xanthan gum or another additive to replace the needed gluten.
Neither of the flours you are using contain any gluten. You can make matzo crackers with a batter like that...

We need volunteer help around the land, as well as devoted community members.*

Space is available at our 9 acre permaculture homestead/naturalist school in Sedro-Woolley (one spot is for someone who has a trailer - we have water and electric hookups for that spot). There are always sites for tents. Check our our website! (Ravensroots.com)

We are a community of people working to grow our own food, medicine and live sustainably off the land and are looking for like minded people. These are not just rentals and we are looking for people that are looking to participate in what we are doing. In addition to the very affordable rent listed above, there is a work trade component as well. Volunteers are always welcome.

Working interviews will be held on our farm for potential residents (2 days of work) before we make our selection.
