Thank you both. I was concerned I needed them to dry down in the garden for good storage, similar to winter squash or popcorn. I'll stop watering them for a week and get them on racks to dry.
They're quite big for potato onions, but I think most of that is thanks to the variety? Plus my mountain of horse manure compost and our growing climate.

This year I've grown Green Mountain Multiplier potato onions from true seed. Started the seedlings indoors, got them outside a little late, a little small, and spaced a little too close.
I have no experience growing alliums for storage, and this area of my garden receives irrigation nearly every day.
It's now nearly September here in western Washington state, they haven't stopped growing, and the tops have not died back. I want to store the entire harvest for replanting in the spring, but I am very concerned that the tops will not die back while it's still dry enough to harvest for storage.
Do I need to discontinue watering before the tops have died back? Can I harvest for storage even if the tops do not die back?

I decided to mount my flat cutter on a round wood tool handle from Home Depot ($5-$10), felt it would work better for me than the recommended handle. Very pleased, the whole setup is rock solid, I'm aggressive with it and no part of it is going to bend or break, I like the end-heavy feel of the heavy flat cutter with light handle. My previous favorite was a loop hoe, the ploskorez does everything it does, with the addition of digging and moving soil very well due to the open end.

Thanks for posting this, I've been checking for this year's schedule! We attended the September date last year and it was GREAT, looking forward to visiting in July this year!

My family and I drove down to Onalaska today for the tour.
It was fantastic. Michael, Chris, everyone involved exceeded expectations. The place is beautiful, the chestnuts which we spend quite some time with are stunning and a personal favorite. The snacks offered at the tour's conclusion couldn't have been better.
One of the highlights of my summer. Permies, get out to a future tour if at all possible!
