The book Southern Forages (Hoveland and Lacefield) is fantastic, and very easy to follow. It works for the majority of the US I believe, with an obvious focus on the southeast. It cost me about $40. It won't tell you how to stock your animals exactly, but it will give you the tools to figure it out based on what you have available to you.
