Hi!  permie/nature lover Jenny here, with a resource on beaver coexistence.  Beaver Institute  https://www.beaverinstitute.org
is a nonprofit that works toward human-beaver coexistence and even trains people in how to build pond levelers and other structures that keep everybody happy and alive.  If you read the book about beavers "Eager" by Ben Goldfarb, then you know about Mike Callahan, Beaver Institute founder.
I just got an email from them yesterday saying that they now have a help desk for learning about options.   There are also DIY articles on the website to get going ASAP.

Highly recommend elecampane tincture. It’s a specific plant well known for for respiratory illness recovery. Just a couple drops in a tablespoon of water, a few times a day will do. As with all remedies and medicines, don’t overdo. It takes a few days to make a big difference, but if you have an upper respiratory or bronchial cold will probably start feeling better right away, especially when paired with using salt water in a Netti pot each morning. A quarter teaspoon salt to a 1 cup netti  pot full of lukewarm water. Feel better everybody!
Worms love the pith inside dry sunflower stalks.  Bury them under the wetter stuff where the worms can get at them. :)

When someone close to us doesn’t have the same interests, what do we do? And is permaculture an interest, or is it the fact that you’re actually trying to save her life and yours? It could be a do or die thing, but maybe you’re going to have to open your hand and let that go.Only thing I can think of doing is to help other people with their permaculture projects. Do your level in a different arena. Prioritize your relationship, because that’s where most of our growing as a human being takes place. I’m sure if you back off to her level, you will still make significant + changes in your lives, and save your relationship. Be the leader in your team and create peace  Be like water, find a way around the problem, or better yet, see the problem as an opportunity.Good luck!

Well, part of the problem might be doing a whole gallon at once. But my favorite free and easy solar dryer is the back window of my black car. Whatever I'm drying: herbs, flowers, or sliced fruit (recently I dried sprouted lentils too), I simply place a single  layer on one side of a tea towel, fols the other side over to protect from dust, and leave in the back window for a couple days, checking and fluffing or turning occasionally. Makes the car smell good. A great conversation piece with strangers in the parking lot, and you can offer them a semi-dried piece of strawberry, for instance, and do some great do-it-yourself outreach.

I agree, invest in your community, not in more security. The whole future is about people stopping thinking so much about themselves only and accumulating and protecting property as a priority. I also agree that an aggressive dog without regular positive reinforcement and time spent exercising with the owner (as their own little pack) is a dangerous situation.  Last thing. Insurance is largely a scam. If we were really trying to prevent everything that could happen, no one should be driving cars, no one should be even getting out of bed in the morning, you might slip and break a hip. That's not an excuse to be one of the aggressive, scary people with guns and dogs and fences and security cameras. Remember, do good things, don't spend your time worrying about the bad guys. Like attracts like, fear creates bad situations, but still and compassion makes a better world
