In 2020 I learned that easiest and tastiest (for us) type of shoot to grow outdoors is fava bean. I soak them, them sow thickly in large nursery pot and cover with 1/2-1" of soil. Once they sprout, I just chop them off above the soil line and use like lettuce. I started doing this in March of 2020, stopped in the summer, then started up again in the fall. Right now it's 28 degrees in central NC in Jan 2021 and the ones I planted in Oct are still growing with no row covers and edible, if you don't mind a bit of the bitter. I got the seeds at the Mediterranean grocery store down the street.
