Hello all, new here. So I've been canning for a while now and recently came across a Caramel Apple Coffee Jam recipe on the Fresh preserving website.  I'm wanting to make it, just without the Coffee. (Most of my family and friends would prefer without) So I was wondering if it is safe to use recipes from other sites, not official, for canning. Some call for butter added at the end which I could just omit. I've found a couple other Caramel apple jam recipes but I just want to be sure they are safe to use, or should I add lemon juice, etc.?
 Or, could I just substitute water for the coffee in the official recipe?
