I just did this with the beef we butchered. I got back about 30# of the fat from around the kidneys and inside. It made 3 qts and 12 pints. I watched YouTube videos. Next time I'm going to have them grind it up. It was hard to cut into small chunks. Some I'll use for cooking but the other I plan on making soap and lotion. (My hands were super soft despite the grossness of it all).
