Pamela Smith may I suggest you recommend your friend consult the USDA or Ball Book for safe canning methods. Proper headspace is 1/4 inch not 1/2 inch. Canning jar flat lids are no longer meant to be boiled/sterilized. Haven’t been for many years. In fact they could lose their seal. Flipping upside down…well that is just a no. Water bath in a canner for 10 minutes a must.
